Paleo Cereal!

I don’t even know how I’m having time to write this blog post right now….I am actually waiting for my water to boil so I can start dinner. The first week of school has been stressful. I don’t wanna talk about it.

I accidently got sidetracked Pinterest-ing pumpkin recipes and forgot to start dinner until my husband started complaining he was hungry. Woops.

I am so ready for this pumpkin onslaught. I was going to wait until October but I just couldn’t resist. I have a couple of recipes planned for this weekend. This is what I look forward to. Last night I made pancakes for breakfast (for today and tomorrow) and they were glorious.

Practical Paleo is the best book ever. I tried to add it to this box that I was packing for when we move, and I have already packed it and unpacked it about 3 times. I use it way too often.

How does everyone feel about football? It’s on ALL THE TIME. Annoying.

Anyways, cereal. It’s really good. I could easily eat a whole box. Cheerios, Kashi, Corn Pops, Frosted Flakes, Raisin Brain. I mean it’s so good. Buuuuuut it’s nutritionally crap. It’s sugar in a bowl. And expensive. So I’ve cut it out of my life. I still miss it! I’ve been dancing around the idea of making a Paleo cereal for awhile. I finally did. So good. I was worried about not feeling full from it for long, but that wasn’t an issue. It filled me up all the way until lunch. And it was easy and fast. Here’s my version:

Paleo Almond Cereal

2 tablespoons almonds

2 tablespoons roasted pumpkin seeds (pepitas)

              (I roasted mine a day earlier in the oven with honey and cinnamon.)

1 tablespoon chia seeds

1/3 cup coconut milk

1/3 cup water

1/2 banana**

handful of blueberries**

**You could add whatever fruit you wanted, this is what I had on hand.

Put the coconut milk in a bowl and add your chia seeds. Let it sit for 3-5 minutes and thicken (I was curling my hair while this was happening).

Take 1 tablespoon of the pumpkin seeds and your almonds and pulse in the food processor a few times. Decide how “chunky” you want it. I didn’t grind mine to a pulp but it resembled granola.

Place the mixture and the rest of the seeds into the bowl with the chia seeds and milk once it’s thickened and add your fruit on top. Add water to your desired consistency. You could also add a sprinkle or cinnamon or honey to the top for sweetness.

Yum!

Strawberry Almond Flax Protein Smoothie

Hope everyone’s week back at work is going smoothly. Mine’s been rough to say the least. Staying positive has been tough and I’m experiencing some post-holiday blues regarding the weather, the back injury issue, as well as it being crunch time at school for testing. Is is summer yet?

I wanted to share a great smoothie recipe I had the other day. Like I said in a previous post, I don’t really consider many of my shakes to be my own original recipes but this one came on a whim and I had to share! The rich taste of the almond butter really makes it unique, and the protein fills me up! I also added chia seeds and flaxseeds because I just recently bought chia seeds and have been dying to see what the fuss was about, and flaxseeds are supposed to be good for you so I threw them in for good measure, lol.

strawberrysmoothie Strawberry Almond-Flax Protein Smoothie

1 scoop vanilla protein powder (I use designer whey)

1/2 cup of fresh strawberries

1/2 cup of low fat or fat free cottage cheese (just trust!)

up to 1 tbsp almond butter(I put about 1/2 tbsp, but I didn’t want to add a ton of calories)

1 tsp flax seeds

1 tsp chia seeds

6-7 ice cubes

water to mix everything up

Blend until smooth! You may also, if you prefer, want to add sweetener. I find I enjoy my shakes without it.

P.S. Bloggers- I tried overnight oats!! I don’t know…I’m not completely sold. I just tasted like Greek yogurt and some gooey oats (which was what it was). And I much prefer hot oats. I put a bit of almond butter on top with some coconut shreds and it didn’t really do much for me. What combo should I try for overnight oats that will make me a believer?!?

New Year New Food

I’ve never been one to spend the money on organic food (I tend to be coupon/sale obsessed)   , but I have been paying more attention to which products are worth buying organic (some fruits, vegetables and greens) and which don’t matter (shampoo). Natur-Tyme is a great organic food store that popped up in my hometown a short time ago. When I went the first time I was in awe……..all of the awesome alternative cooking and baking supplies I have been seeing on blogs was right there in person!

I was the lucky recipient of a gift certificate to Natur-Tyme for Christmas!!!! Ahhh I went today and I went crazy! I can’t wait to try out some new recipes with the goods I got. Another great gift from Austin’s aunt was this book by Dr. Andrew Weil called True Food. I love it! It has tons of recipes that stress whole, immunity boosting and inflammation reducing foods. ‘

Can’t wait to try some recipes, but some of them have some complicated ingredients- which I was able to find at Natur-Tyme! Score!

Sorry, I’m blogging from my sister’s computer and didn’t have the time to doctor up the picture. I got: three tubs of PB 2, expeller pressed canola oil, almond flour, almond milk, almond extract, quinoa, yeast flakes, steel cut oats and chia seeds. Can’t wait to try overnight oats with chia seeds!!!! The steel cut oats were a disturbingly good deal- that entire thing on the right was only $2.00. They are usually more than $4 at the store for Quaker steel oats.

Obviously had to stock up on PB 2. Three tubs should last me awhile! I put this in smoothies, oatmeal, and desserts. I’m excited about the almond extract also. I plan on putting it in oatmeal, smoothies, pancakes….and even waffles since I now got my new waffles maker! (Forgot to mention that on my previous post) I promise there will be some good recipes with my new goodies!

Any suggestions for what I can make with any of these ingredients!?!?
